We were swamped tonight.

I advertised it on two of Cove's Facebook pages and a Lampasas page and I think it paid off.

We did 175 plates.

Had to open the dining room partition to make more room for more tables.

We ran out of shrimp so the "boss" had to rush to the store to get more.

The guys in the kitchen are the best. They kept up with the demand all night and maintained the quality standard.

That's great!

Council 9930 in Harker Heights came close to that number. However, if they do not improve their catfish frying technique, I may have to drive to Copperas Cove. The catfish fillets taste and feel like catfish chips due to the grease being too hot and the fish being left in for too long. Fortunately, they also offer baked flounder and shrimp as alternatives.

We're doing our Good Friday Fish Fry at the Knights Hall on 2657 on the 29th from 5:00 - 7:30.

On Saturday, against my better judgment, we're going to Lorena to sell catfish, shrimp, and schnitzel sandwich baskets at the Rattlesnake Roundup there.

Our last Lenten Fish Fry is tonight. We'll have baked White Bass as long as it lasts.
